The word 'Yacon' means "water root" in the Inca language and it aptly describes this versatile South American tuber.  It has a mouth-feel similar to water chestnuts and a subtle yet sweet flavor like a pear.  Yacon contains an indigestible sugar called inulin which makes it an ideal sugar substitute for diabetics and is also very low in calories.  The most common culinary usage is to render it into a very sweet syrup which can be used much like honey or maple syrup.  It's also an excellent addition to smoothies.  One of our gardeners is diabetic and has really enjoyed developing and adapting recipes featuring Yacon because she can consume it without the usual dietary difficulties she faces.  Click the button below to see her recipes, or click the other button for Yacon planting tips if you wish to grow your own.
